Ingredients:
24 large Shrimp (thawed)
2 medium Mangoes (diced)
2 medium Avocadoes (diced)
3 tablespoons Cilantro leaves (chopped)
1 tablespoon Lime zest
1/2 teaspoon Chili Flakes
1/2 teaspoon Black-pepper
3 tablespoons Olive Oil
1 teaspoon Honey
2 tablespoon Lemon juice
Directions:
1. First, make the Lemon Lime Vinaigrette. Lightly whisk the lime zest, chili pepper flakes, black pepper, lemon juice, honey and olive oil together and set aside.
2. Then, arrange the diced mangoes and avocado pieces on the plates, or into a large platter.
3. Bring water to a boil in a medium sauce pan, add shrimp and cook until pink in color or 3-4 minutes. Rinse with cold water to stop the cooking process.
4. Add Shrimp to your plate or platter.
5. Drizzle with the lemon vinaigrette and chopped cilantro for garnish.
6. Enjoy!
